bacteria and yeast. We use green tea and cane sugar. All the

sugar is consumed by the SCOBY and enzymes and
antioxidants. At the end of fermentation, we add the natural flavors.
Each drink is carefully produced using artisanal methods at our facilities in Évora. We use our own GUTsy Captain Kombucha probiotic cultures and only the highest quality certified ORGANIC ingredients.
To make Kombucha, sweetened green tea is fermented with a symbiotic colony of bacteria and yeast, known as a SCOBY.
During the fermentation process, the yeast in the SCOBY breaks down the sugar in the tea and releases the probiotic bacteria.
Kombucha becomes carbonated after fermentation.
